It is not always that I end up making a salad for lunch.
But I had stuffed myself with so many sweet treats over the week it was definitely due. Not all my food (read dessert) pictures make it to Instagram 😉
This is a easy spring/summer salad, with a lot of options as to mixing and matching. Throw in any seasonal fruit or berry (strawberry is always my first choice) with roasted almonds and feta cheese for that extra crunch and protein. The dressing is fairly simple, made with ingredients you can easily find in your kitchen. I have used Extra Virgin Olive oil, fresh lemon juice with salt and pepper.
You can take it up a notch by adding Dijon mustard, honey and freshly chopped herbs.
Plus the salad looks pretty fancy.
Prep Time: 5 Minutes

Putting it Together Time: 5 minutes
Serves: 2 people
Ingredients 1 bunch fresh spinach (clean and dry) 1 tsp lemon juice Salt and Pepper to taste 1 Tbsp Extra virgin Olive Oil Optional 1/2 tsp Dijon mustard 1/2 tsp garlic powder or clove of minced garlic Pinch of sugar 1/4 tsp honey Chopped fresh herbs
Method:
- In a small bowl mix together Extra virgin Olive Oil, lemon juice, salt & pepper and keep it aside. You can also add the ingredients listed under Optional section here.
- In a mixing bowl, brush about half a tablespoon of the dressing on the bowl with the help of a spatula or pastry brush.
- Add spinach leaves and toss them in so as to coat them evenly with the dressing.
- Grab a salad plate, dot the fresh cut strawberries on top of spinach leaves and drizzle the remaining dressing just before serving.Enjoy!
