I have a food theory.
Any vegetable that can be shredded, or finely chopped, can be tucked into a savory batter with cheese and lightly fried to perfection.
“Broccoli fritters” is one such dish that comes together beautifully with five simple ingredients.
I was amazed by the amount of broccoli I could fit in!
I used an entire head and it could make seven amazing medium sized fritters. Cut the broccoli florets and steam them for about 3-4 minutes and remove immediately. This way our broccoli will retain its green color and be fresh in every bite.
Lightly mash it with a potato masher or simply use a blender. I like few coarse broccoli pieces in my fritters, so I don’t tend to mash them completely. Its really a personal choice, if you do not fancy coarse broccoli pieces in your bites by all means crush them finely.
I have added a dash of red chilly flakes in the batter as the Indian in me just couldn’t resist giving it a spicy kick.
I love how versatile this recipe is, replace broccoli with corn and you get corn fritters!!
Serve them hot with some yogurt and ketchup but honestly you do not need any condiments to go with them. They taste great as they are!
Note:To make this dish healthier replace All purpose flour with Almond flour and use peanut oil to lightly fry them.

Cook Time: 10 minutes

Served: 6-7 medium sized Fritters
Ingredients:
1 and ½ cups broccoli florets, steamed and coarsely mashed
½ cup grated Parmesan cheese
1 egg, lightly beaten
½ cup All Purpose or Whole wheat flour
3 tablespoons vegetable oil, for frying
Pinch of Red chilly Flakes (as per spice preference)
Salt and Pepper to taste
Method:
1.In a large mixing bowl combine broccoli, Parmesan, red chilly flakes, egg and flour.
2.Mix everything with a spoon until combined.
3.Heat vegetable oil in a large nonstick pan or skillet over medium-high heat.
4.Use two tablespoons or 1/4 cup measuring cup and pack the mixture tight. Drop them into the pan and flatten it slightly.
5.Cook for 3-4 minutes per side; flip and continue to cook for another 2 minutes or until it is slightly golden brown. If they start to brown immediately , lower the heat to medium.
6.Repeat until the rest of the mixture is done.
7.Remove and transfer them on a paper towel.
8.Serve hot along side sour cream or fresh yogurt.
