In this post, I have for you really easy and super healthy Banana Oatmeal Pancakes, which require only 3 main ingredients, (yes you read that right) and is perfect for breakfast! These pancakes are really high in protein, low in calorie, gluten-free and taste great with your favorite topping!! I was really impressed with how these turned out. Now, you can make healthy pancakes using three main ingredients which are bananas, eggs and oatmeal however, if you want your pancakes to taste really really good you are going to need some extra ingredients. I like a little flavor in my pancakes so in this recipe, I have used frozen blueberries, cinnamon, honey, vanilla extract and baking powder.
Prep Time: 15 minutes
Cook Time: 10 minutes
Served: Hot
Ingredients:
2 ripe bananas (Medium-large size)
1&1/4th cup oatmeal flour
2 eggs
Pinch of salt
1 tablespoon honey (optional)
1 tablespoon cinnamon powder (optional)
1/8th tsp baking powder (optional)
¼ tsp vanilla extract (optional)
Frozen/fresh blueberries for topping (optional)
Method:
Add banana, eggs, baking powder, cinnamon powder, salt, honey and oatmeal flour in a blender. Mix them for about a minute and you will see the batter like the picture below.
Keep aside this batter for 10-12 minutes so that it thickens.
Now, heat a non-stick pan on medium heat. Just coat it lightly with butter so that it is easier to flip the pancakes. You can also use a cooking spray.
Take about 1 cup of the pancake mix and pour in the pan. Dot with blueberries as shown and you want to wait for about a minute till you see small bubbles in the pancake.
Tip: You can add chocolate chips to the pancake batter just before pouring it into the pan to make choc chip pancakes!
Once you see the bubbles, take a spatula or a flat bottom spoon and flip the pancakes. Now, this can get a little tricky but the easiest way to go about it is to gently put your spatula underneath the pancake and just flip! Don’t worry if it looks little messy or squishy when all of this is done the pancakes will come out nice and clean. Cook them for a minute or so and your pancakes are ready to go! This batter will make about 6-7 mini pancakes.
The banana flavor in the pancake is very dominant and it gives a nice sweetness without having to add any sugar. I have served the pancake with some frozen blueberries, banana slices and honey.
